To make a balanced white wine sangria with tropical fruit, I highly recommend a Torrontés from Argentina. It has its own natural floral notes that mirror the guava perfectly. If you cannot find that, a Spanish Albariño or a very dry Vinho Verde provides the bright acidity needed to balance the density of the agave nectar. A Note on Ingredients for Sangría de Guayaba

In Mexico, we use small, round limes that are incredibly tart and aromatic. If you can find Key limes at your market, use those! They provide a much more authentic citrus backbone than the larger Persian limes.

Also, the choice of agave nectar over white sugar is intentional. Not only does it dissolve instantly in cold liquids (no grainy sips!), but it offers a rounder, more sophisticated sweetness that complements the tropical profile of the mango and guava. In a large glass pitcher, combine the diced mango, lime slices, agave nectar, and light rum.

Using a wooden spoon, gently muddle the fruit to release a little juice. This is the start of the maceración (mah-seh-rah-SYON).

Allow the fruit mixture to sit at room temperature for at least 30 minutes. This draws out the essential oils and creates a concentrated flavor base.

Pour in the guava nectar and the bottle of white wine. Stir gently to incorporate the agave.

Cover the pitcher and refrigerate for at least 2 hours. This time allows the floral notes of the guayaba to weave through the acidity of the wine.

Just before serving, pour in the chilled sparkling water and stir once. Fill glasses with ice, pour the sangría, and ensure every glass gets some of the macerated fruit.
